Roasted Cauliflower & Potato Curry Soup
What is potato?
A potato is an edible plant tuber. It is cultivated all over the world. There are many different types of potatoes and they can be used in a variety of dishes. It is a popular vegetable. Recognized as one of the most filling foods, potatoes are the most satiating and lead to the greatest reduction in overall calorie intake. Potato skins also contain a lot of fiber, which moves slowly through the body without being digested and reduces hunger. Studies have shown that potatoes can increase satiety and reduce hunger, due to their fiber content and high density.

What is cauliflower?
Cauliflower is a species of Brassica. Brassica is one of several vegetables in the oleracea genus, which belongs to the mustard family. Cauliflower is an annual plant that is produced by seed. Usually, only the head is eaten. The head of cauliflower is composed of a white inflorescence meristem, and the head of cauliflower resembles broccoli, differing in having the flower bud as the edible part. These include broccoli, Brussels sprouts, cabbage, and collard greens, which are collectively called "coli" grains even though they are different cultivars. Cauliflower comes in 4 different colors- white, orange, green, purple.

Ingredients
- 2 tsp coriander (chopped)
- 2 teaspoons cumin seeds
- 1 teaspoon cinnamon
- 1 teaspoon turmeric
- 2 teaspoons of salt.
- 1 teaspoon pepper
- A half-teaspoon of red pepper
- 1 small cauliflower (chopped)
- 2 tablespoons of olive oil.
- 1 large onion (thinly sliced)
- 1 cup carrots
- 3 large cloves of garlic (minced).
- 1 teaspoon ginger (grated)
- 1 fresh red chili
- 1 tomato sauce
- 3 cups peeled potatoes
- 3 cups peeled sweet potatoes
- 2 teaspoons lime zest
- 2 tablespoons lime juice
- 1 can coconut milk
Cooking process
Pre-heat the oven. Combine coriander, cumin, cinnamon, turmeric, salt, pepper, and cayenne in a bowl. Now toss the rice in a bowl with 1 tablespoon of oil, sprinkle with cauliflower, 1 tablespoon of spice mix, and toss again. Now spread the cauliflower in a single layer on a baking sheet and roast for 15 to 20 minutes. Keep aside.
On the other hand, heat the remaining 1 tablespoon of oil in a pan over medium heat, add the onions and carrots, and stir until browned. Reduce the heat. Now continue cooking. Stir occasionally, until the onion softens. Now add the garlic, ginger, chili, and remaining spice mix and cook, stirring, for another 1 minute.
Now stir in the tomato sauce, scrape out the brown bits and cook for 1 minute. Add the stock, potatoes, sweet potatoes, lime zest, and juice and cover. boiled in boiling water over medium heat. Now cook on low heat to maintain a low heat. Cover partially and stir occasionally. Cook the vegetables for about 35 to 40 minutes.
Now stir in coconut milk and fried cauliflower.
Finally, serve it garnished with coriander leaves and chilies.
