Ingredients
1/4 tsp sunflower oil1 small onion diced 300 gm potatoes peeled200 gm courgette300 gm cauliflower200 ml milk500 ml vegetable stock1 tsp salt1/4 tsp black pepper1 tbsp tomato puree
Method
In your pan/soup maker, add chopped onion and curry paste along with oil. Stir the onions so that they are coated in the curry paste.
Then peel the potatoes and cut them into small pieces, and cut the cauliflower into small pieces. After that add all the ingredients to the pan together.
If using a soup maker, set the machine to the smoothest setting and leave the machine to do the work, and after it's done, taste the soup to make sure it's perfectly smooth. if there are small lumps, it must be turned on to run again.
If using a pan, cook the vegetables until soft. Then blend in a blender. If the vegetables are cut into small pieces, it will take about 20 minutes to puree. Easy to make, delicious and healthy creamy vegetable curry soup.
