  • 4 garlic (finely chopped)
  • 1 large red chili (without seeds)

Method

To make the sauce, place the beetroot in a blender and add together the olive oil, salt, garlic and pepper to a smooth paste. Place half the sauce in a small zip-lock freezer bag and refrigerate, sealing tightly.

Now mash the feta cheese in a bowl then add the chopped dill and then drizzle over the lemon juice.

When the pasta is cooked to your liking, put it back in the pan and pour over all the beetroot sauce and toss, place in a serving dish and sprinkle all over the feta dill mixture. Drizzle with a good measure of extra olive oil to serve.
